  2. Add the lime juice, chopped onion, minced jalapeño, salt, and pepper.


  3. Mix everything well until blended.


  4. For an extra kick, consider leaving some jalapeño seeds in.

Jasmine Rice, Steak, & Guacamole (my version of Qdoba Bowl)


If you're like me, I absolutely love steak and if I can incorporate into a dinner that doesn't take much time it's a win. This meal is great and quick for after work and still getting a good amount of protein. Ingredients listed below can also be found at Walmart.


Ingredients:


  • Yo Quiero! Ready-Made Fresh Produce Guacamole Dip

  • Mahata Jasmine Rice, Thai Fragrant Long Grain Rice (5 lbs - with an option for a smaller bag)

  • Frozen Steak Strips by John Soules


Instructions:


Prepping the Rice (optional):


  1. For a healthier choice, place 1 cup of Jasmine rice in a medium-sized bowl. Add water to the bowl with the rice until it is completely submerged.


  2. Move the rice around in your hand to remove the starch.


  3. When the water becomes cloudy, either pour it out or use a strainer. I recommend using a strainer with small openings to prevent the rice from falling through.


  4. Continue repeating the process until the water clears up, usually after 3-4 repetitions.


    TIP: For every 1 1/4 cups of water is 1 cup of rice.


Cooking the Rice:


  1. Take a medium-sized pot and add 1 1/4 cups of water to it. Turn the heat to high.


  2. Add the rice to the pot and heat until it reaches a boil, creating foam


  3. After bringing it to a boil, cover the pot and lower the heat. Let it simmer for 12 minutes.


  4. KEEP THE LID ON for the entire 12 minutes


  5. Once the 12 minutes have passed, switch off the heat and allow the rice to sit for 10 minutes with the lid remaining on.


  6. Enjoy!


Cooking the Steak:


  1. Set the oven temperature to 375 degrees to preheat.


  2. Remove the steak from the 12 Oz bag and place it on a cookie sheet (my husband and I prefer to use foil on ours for easier cleanup).


  3. When the oven is preheated, put the pan inside. The bag's instructions suggest cooking for 5-6 minutes, but I prefer to cook for 10 minutes.


  4. After 10 minutes, remove the pan from the oven, allow it to set for a few minutes, and enjoy!



Garlic & Herb Guacamole


If you are a garlic lover, this recipe will delight your senses. The combination of garlic and fresh herbs takes this guacamole to a whole new height.


Ingredients:


  • 2 ripe avocados

  • 1 lime, juiced

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 tablespoon fresh basil or parsley, chopped

  • Salt and pepper to taste


Instructions:


  1. In a bowl, mash the avocados with a fork.


  2. Stir in the lime juice, minced garlic, chopped onion, and fresh herbs.
